Coconut Milk
1 (8-ounce) package unsweetened shredded coconut (about 2 1/4 cups)
4 cups hot water
Combine the coconut and hot water in a blender.
Allow the mixture to rest a few minutes.
Blend on high for 1 to 2 minutes until the coconut is pureed and the mixture looks milky. You’ll still have flecks of coconut in the mixture.
Pour the mixture into your nut milk bag.
Squeeze out the coconut milk.
You can discard the pulp in the nut bag, or you can dehydrate it to make coconut flour.
Bottle the coconut milk.
Use right away or store in the refrigerator for up to four days or freeze for up to 3 months.
Your coconut milk will separate after being refrigerated. Just give it a good shake before using.
