Way back in the Middle Ages, humans were making milk out of all sorts of nuts, seeds, and grains.
Somehow over the years, this art has gone out of favor. Now almost everyone assumes that "milk" is that white stuff you get from a cow. Most of us don't even think about the white stuff you get from non-animal sources.
There's been somewhat of a resurgence though. Now you see almond milk, soy milk, rice milk, and other kinds of plant-based milks for sale commercially.
That's been great for people who are allergic to cow's milk, or for people you can't digest it, or for those who have chosen a vegan lifestyle.
But those commercial products aren't all they're cracked up to be. They have sugars and other additives that you probably don't really want.
If you make your own, YOU control what goes into your milk. It costs less, too(see Soaking Times for cost comparisons). And it's really not that hard to do.
